2024 provided exciting opportunities to return to some of our favorite industry events. Our team was proud to attend Natural Products Expo West (NPEW), Southern California Institute of Food Technologists Supplier’s Night (SCIFTS), and IFT FIRST Annual Event and Expo.

At SCIFTS, we participated in the renowned fundraising event that celebrates the advancement of food science. Each year we are greatly inspired by the new technologies in the food industry, and the forward-thinking food companies and creators in our industry.

At NPEW, we embraced the opportunity to connect with our community face-to-face, and debuted our bright new blend, PSC Tuscan Dream, with the help of Chef Marc Dix. This event also provided new insights on the role of technology in the spice industry, key flavor trends, and the rising popularity of specialty ingredients.

Our booth at IFT FIRST featured a sample station with two of our spice blends, reimagined in new ways. The 2024 IFT FIRST Annual Event and Expo took place at McCormick Place in Chicago from July 14th to 17th. This event was a success from start to finish, and we are proud to be a small part of such a fun, educational, and connective industry event.

Events like IFT FIRST give us a chance to discover the latest trends, learn about cutting edge food innovations, and better understand the needs of our clients. IFT FIRST never disappoints, and always results in clear takeaways and a renewed sense of purpose and passion for this incredible industry.

 

PSC Curry Powder + PSC Barbecue Spice Blend

IFT FIRST is known for its unique focus on innovation in the food industry. This year, we were eager to participate in this theme by highlighting ways to use classic blends in innovative ways. At our booth, we pushed two classic blends beyond their traditional limits to showcase their potential. We are pleased to report that each blend received praise. Some tried just one dish, but most sampled both (and some visitors even came back for second helpings!)

Everyone who stopped by our booth had the chance to try curry fries, made with PSC Curry Powder, and vegetarian BBQ chili, made with our PSC Barbecue Spice Blend.

Here are the flavor details of each blend:

  • PSC Curry Powder: This blend combines spices like cumin, turmeric, onion, garlic, and chili peppers to create an authentic curry flavor.
  • PSC Barbecue Spice Blend: This blend features cornerstone spices such as paprika, onion, and garlic, striking a perfect balance of sweet and spicy.

Our team reported that the sample station was a big hit with attendees, and that the aromatic spices in the Vegetarian BBQ Chili and the Curry Fries drew crowds to our booth.

The PSC Barbecue Spice Blend was reported to be “the crowd favorite”. Many expressed that the flavors were pleasing to the palette, and that they could taste a sweetness in the blend, along with a spicy kick from the chili peppers. They also appreciated that the chili was a stand alone tasty meal. Attendees who sampled our PSC Barbecue Spice Blend appreciated its “perfect pairing of seasonings” and brainstormed other innovative ways to experiment with it. According to our team, some even asked to buy our PSC Barbecue Spice Blend right after tasting it!

Customers were also very receptive to our curry fries. While the curry fries were not as popular in the morning, they became very popular in the afternoon rush. Our team reported that curry fries recipe was more divisive among visitors, and that those who liked the dish, LOVED the dish. Overall, visitors thought the recipe was a creative way to showcase the blend, and appreciated that the flavor was “bold, flavorful, and surprisingly delicious!”

Overall, attendees appreciated the innovative ways we used each of our featured seasonings, and we received enthusiastic feedback about each one. Because this year’s event focused on innovation, attendees were also eager to brainstorm other unusual ways to use these blends, which sparked creative conversations.

PSC Curry Lamb Tacos

Ingredients for the Lamb

3 tbsp PSC Curry Powder
2 garlic cloves, minced
1 lemon, juiced
2 tbsp olive oil
Salt to taste
2 lbs of lamb shoulder, thinly sliced or ground

Ingredients for Pomegranate and Red Onion Relish

1 large red onion, finely chopped
1/4 cup pomegranate seeds
1 lime, juiced
1/4 cup fresh cilantro, chopped
Salt and pepper to taste

Ingredients for the Lime Cilantro Crema

1 cup dairy-free sour cream
1/4 cup fresh cilantro, finely chopped
2 limes, juiced
1 tsp PSC Curry Powder
Salt to taste

Ingredients for the Cucumber Herb Salad

1 large cucumber, thinly sliced or julienned
1/4 cup fresh herbs (such as dill, mint, and parsley), finely chopped
1 tbsp olive oil
1/2 lime, juiced
Salt to taste

To Serve

Corn or flour tortillas, warmed
Garnish with cilantro and lime wedges

Steps

  1. Marinate the Lamb: In a mixing bowl, combine PSC Curry Powder, garlic, lemon juice, olive oil, and salt. Add lamb and coat it with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.
  2. Prepare the Pomegranate and Red Onion Relish: In a bowl, mix red onion with pomegranate seeds, lime juice, cilantro, salt, and pepper. Let it sit for at least 30 minutes to allow the flavors to meld.
  3. Make the Lime Cilantro Crema: In a small bowl, add sour cream, cilantro, lime juice, PSC Curry Powder, and salt. Whisk until smooth.
  4. Prepare the Cucumber Herb Salad: Combine cucumber with mixed herbs, toss in olive oil, lime juice, and a pinch of salt.
  5. Cook the Lamb: Grill the marinated lamb over medium-high heat until it is charred and cooked to your liking. If lamb is sliced, grill for 3-4 minutes per side or until it reaches an internal temperature of at least 145°F. If lamb is ground, cook thoroughly.
  6. Assemble the Curry Lamb Tacos: Warm tortillas over low heat and place on a plate. Add a scoop of cooked lamb, top with Pomegranate and Red Onion Relish, add the Cucumber Herb Salad, and drizzle with Lime Cilantro Crema.
  7. Serve: Garnish tacos with additional cilantro, and place a few lime wedges on the plate. Serve immediately.

From shaking hands at our booth, to debuting an exciting new spice blend, meeting with customers, attending fun events, and learning from the greatest minds in the industry, Natural Products Expo West (NPEW) 2024 was a success! It was such a pleasure to connect with so many passionate industry professionals, and to gather together with people from all over the country to celebrate our shared passion for natural foods and flavor innovation.

We want to express our gratitude to everyone who visited our booth and shared their enthusiasm for our new blend, PSC Tuscan Dream.

For those of you that were not able to try it in person, PSC Tuscan Dream is a balanced combination of spices and herbs like oregano, thyme, rosemary, red chilis, garlic, onion, lemon, and pepper. This blend contains the very best of bright citrus, aromatic herbs, and savory spices, resulting in an incredibly versatile seasoning that makes a wonderful spice base for oils.

Everyone who visited our booth had the chance to try PSC Tuscan Dream in a bread, spice, and oil station, and we received an overwhelmingly positive response from everyone who enjoyed a free sample.

At our booth, we blended PSC Tuscan Dream with extra virgin olive oil and served it alongside eight different toppings, including a variety of vinegars, parmesan, and chili flakes. This sample station allowed visitors to experiment with the blend and experience its depth of flavor and adaptability first-hand. In a special recipe tasting event, Chef Marc Dix presented this new blend to showcase its flavor and share its vast potential for culinary creativity.

Attendees reported that they were pleasantly surprised by the blend’s “spicy kick” and “bold flavor”, and were excited to hear that PSC Tuscan Dream pairs beautifully with seafood recipes. Some liked that this blend is “on trend with hot oil blends” and that the blend itself is salt-free. And others mentioned they looked forward to recreating our simple oil recipe at home.

We were especially happy to see PSC Tuscan Dream well-received by our vegan and vegetarian visitors, who pointed out that they’re always looking for new and exciting ways to season veggies and tofu.

Throughout NPEW, we had so many engaging conversations about this blend, and we are more confident than ever that PSC Tuscan Dream will inspire endless creativity in the kitchen. We look forward to seeing its versatility shine now that it is available to our PSC customers!

Natural Products Expo West

After attending NPEW 2024, our team sat down to discuss what we observed at NPEW in relation to industry trends and unexpected flavor combinations. Here are the highlights:

  • Technology: We noticed more companies in this space embracing technology and influencer culture on social media
  • Specialty Ingredients: More specialty ingredients were represented at NPEW this year. For example: hatch chilies and mushrooms.
  • Flavor Trends: The spicy food trend is alive and well! We also noticed fruit and spice combinations, as well regional flavors, such as Hawaiian, Mediterranean, and Canadian.
  • Marketing: There’s an obvious trend toward “silly” naming conventions and unique packaging options.
  • Booth Design: The booths that stood out the most were the ones with interactive activities such as photo booths, spin the wheel and win a prize, and product giveaways.
  • Attendance: This year’s attendance seemed much higher than it was in the past years.
  • Manufacturing: Our team received many questions about the value of working with a U.S. Spice Manufacturer. We were excited to talk about our full-service spice capabilities, and our unique ability to supply high quality spices and oversee the entire manufacturing process, from raw material to finished product.

 

We had so much fun working together outside of the office, creating excitement around PSC, and telling our story. We are especially excited about all the new connections we made during NPEW, and the promise of potential collaborations ahead.

We wanted to create a blend that was versatile across all types of cuisine, and that could be used as a base for hot Italian cooking oil and chili oil. We measured, taste tested, and blended until we created PSC Tuscan Dream.

This sensational blend is a mix of key spices and herbs, including oregano, thyme, rosemary, red chilis, garlic, onion, lemon, and pepper. Culinary Institute in 1999 and has logged over 20 years of experience in the restaurant industry. We have collaborated with Chef Marc Dix on several past projects, and we greatly value his rich expertise, passion for the culinary arts, and charismatic and creative approach.
